Yuba production process and drying time:
Production process: Bean selection → peeling → pickling beans → refining → pulp rejection → cooking pulp → filter pulp → extraction of yuba → drying → packaging.
Select beans for peeling: It is advisable to choose soybeans full of grains to sieve away dust and impurities. The selected soybeans are crushed and peeled with a peeler, and the outer skin is blown clean. Peeling is to ensure yellow and white color, improve protein utilization and yield. Soak the peeled soy beans in fresh water with pickled bean curd. Depending on the season and temperature, the time for picking beans is 4 to 5 hours in spring and autumn, and 7 to 8 hours in winter. The ratio of water to beans is 1: 2.5. It is suitable that the beans are swollen and puffed by hand, not soft.
Refining pulp: You can grind with stone or steel. From the refining to the filtration, the water is 1:10 (1 kg beans, 10 kg water). Use a spin dryer to filter 3 times, pinch the bean dregs loose by hand, and the water without pulp is the standard.
Cooking slurry: After the pulp is dried, it flows into the container through a pipe, blows the slurry with steam, and heats to 100-110 ° C. After the slurry is cooked, it flows into the sieve bed through the pipeline, and then the slurry is filtered once to remove impurities and improve the quality.
Extraction of yuba: After filtering the cooked pulp into the yuba pot, heat it to about 60-70 ° C, and a layer of oily film (oil skin) can be formed in about 10-15 minutes. Use a special knife to gently cut the film from the middle and divide it. Two slices were extracted separately. Rotate it into a column shape by hand and hang it on a bamboo pole to make yuba.
Drying: Push the yuba hanging on the bamboo pole into the yuba drying room made by Kinkai, and arrange them in order. The temperature of the drying room is 50-60 ° C. After 4-7 hours, the surface of the yuba will be yellow-white, bright and transparent.
